Ingredients:
1/2 box of penne pasta 1 tablespoon olive oil 1/2 onion, finely chopped 1/2 red bell pepper, chopped 1 cup chicken breast, cubed Salt and freshly cracked black pepper, to taste 1 cup Kirkland Marinara Sauce from Tuscany (Crop 2024) 2 tablespoons mascarpone cheese Fresh basil or parmesan to garnish (optional)
Instructions:

Cook the penne pasta in salted boiling water according to package instructions. Reserve 1/4 cup of pasta water before draining. In a skillet, heat olive oil over medium heat. Add the onions and red pepper, sautéing until softened. Add the chicken cubes, seasoning with salt and pepper. Cook until golden and fully cooked through. Stir in the Kirkland Marinara Sauce and reduce the heat to low. Let it simmer gently for 5 minutes. Add the mascarpone cheese and stir until the sauce becomes creamy and luscious. If needed, add a splash of pasta water to loosen. Toss in the cooked penne and stir to coat evenly. Serve hot, garnished with fresh basil or a sprinkle of parmesan.
